Craving a Reuben ~ eat a salad

My favorite sandwich in the world is a good Reuben.  Hands down, I will choose this sandwich over any other if it is offered.  The corned beef, the sauerkraut, the sauce, I love it all.

That become an issue when you love to eat and you want to lose weight.  But, I somehow love to find a way to get it all my way.  I’m also pretty frugal so I will always find a way to get it all without special ingredients.

Meet my friend, the Reuben salad.

Reuben Salad
Start with some fresh greens.  I prefer a butter lettuce blend.  Then add some thin sliced corned beef to a pan and I heat it over medium heat.  I like the Top Round Corned Beef by Boars Head shaved in a non-stick pan.  Of course, if I am feeling supremely lazy, I will microwave it.  Then add the sauerkraut to a pan, or in supreme lazy mode, I squeeze it dry and add it to a saucer in the microwave to warm it through for about 40 seconds.  You can’t tell, but there is a slice of Boars Head thin sliced Pepper Jack on top of the corned beef.  Yes, it deserves a good Swiss cheese, but sometimes you need a kick and I went for a change here.   Plus, I had no Swiss cheese in the house, but I did have Pepper Jack, so you go with what you have.

Then you top it with a great thousand island dressing, or if you are cheap like me, and don’t have that on hand at any time, mix a little mayo {I prefer Duke’s}, a little ketchup, and a little sweet relish.  If you don’t have those things on hand, or at least two at any time, you are failing at life.  Just saying, any self respecting person should have ketchup and mayo at any time ~ it’s called hurricane preparedness in my book.

Do, you need as much dressing as I heaped on there?  No, I was a bit heavy handed, but it was delicious and I promise you will love it as well.  When lifestyle changing {aka dieting for the 10,000th time}, which will begin in a few days, I would certainly cut back on the dressing but not the taste.
